1 Acorn squash, halved, seeds scraped out and sliced int 1/2" moons<br />
2 T. Olive Oil<br />
1/4 Cup grated Parmesan cheese<br />
1 Teaspoon garlic power<br />
Freshly ground pepper<br />

In a large bowl, mix all of the above ingredients enough to coat.<br />
Lay on cookie sheet.<br />

Simple BBQ Meatloaf<br />
<br />
Preheat oven to 350 degrees <br />
<br />
Serves 4<br />
<br />
1 lb. lean hamburg<br />
4 T BBQ sauce, smokey<br />
1 T Dijon Mustard<br />
1 T honey<br />
1 T. Worcestershire Sauce, plus 2 teaspoons<br />
1/4 teaspoon pepper<br />
1/2 teaspoon salt<br />
1/2 cup Panko crumbs, plain<br />
<br />
In a mixing bowl, mix together ground beef, Panko, 1 Tablespoon Worcestershire Sauce, mustard, 3 T BBQ sauce, salt and pepper. Do not over mix.<br />
<br />
Shape into thick log and place in an oiled baking dish. In Small bowl, whisk together remaining 1 T BBQ, remaining 2 teaspoons Worcestershire Sauce and the honey.<br />
<br />
Spread evenly over the top of meatloaf.<br />
Bake 45 minutes to 1 hour. Olive oil </div>

Salt, pepper, dried oregano and parsley to taste </div>

Slice each potato to 1/4-inch thick slice while keeping intact. Place onion slices in between potato slices, starting and ending with potatoes, Onion slices need to be small size as potato slices to ensure even cooking. Place each potato on foil large enough to wrap potato. Drizzle with oil and sprinkle with salt, pepper, oregano and parsley. Wrap up each potato. Grill 15 minutes on each side. To serve, remove foil and place in a large serving bowl. </div>

<span style="font-size: large;"> <span style="font-size: large;">My paternal Grandmother used to make pies using only Golden Delicious apples. </span>In our family, she was the Queen of Pies! I never thought that I would take over that title. But, I guess it is now true. I'm known for my pies. I am a seasonal pie maker. I would never make a pumpkin pie in the spring nor would I make an apple pie in the summer. For everything there is a time and season and that holds true for pie baking.</span><br />
<br />
<span style="font-size: large;">Here is the seasonal breakdown of some of my favorites.</span><br />
<span style="font-size: large;">Spring: Maple Pie, Key Lime Pie, Strawberry Rhubarb Pie, Buttermilk Pie, Maple Walnut Pie, March Madness Pie to name a few.</span><br />
<br />
<span style="font-size: large;">Summer: Continue with the Strawberry Rhubarb until the rhubarb is gone from the garden. Blue-Barb Pie, Peach Pie, Strawberry, Blueberry and Raspberry Pie.</span><br />
<br />
<span style="font-size: large;">Autumn: Apple Pie, Apple-Ginger Cranberry Pie, Pumpkin Pie, Squash Pie, Custard Pecan and Date Nut Pumpkin Pie are some favorites.</span><br />
<br />
<span style="font-size: large;">Winter: Pies take a backseat to Christmas Cookies, Warm Gingerbread, Cookies, Brownies and Puddings! But, let's not</span><br />
<span style="font-size: large;">forget Pecan and Mince Meat (a maternal Grandmother favorite).</span><br />
<br />
<span style="font-size: large;">Although I only make my own crust and profess to have several different kinds of crust recipes, I do like the Pillsbury crust which comes in a box! I can't get away with using it for my family because they are "Kit's Crust Connoisseurs" and can't be fooled. But if you don't have the time to make your own crust from scratch, give Pillsbury a try. It is so easy and delicious. Also, it may make the difference by having a freshly baked pie in your house or not!</span></div>

at 2:20 PM on Monday, June 1, 2015. Our hearts are broken and we are </div>

devastated for his loss. </div>

Mr. Fur was a gentleman, polite, talkative, appreciative, did tricks, </div>
<div style="text-align: center;">
greeted guests, was calm and had impeccable manners. He never </div>
<div style="text-align: center;">
jumped on the furniture or counters...he knew his place. </div>
<div style="text-align: center;">
Mr. Fur enjoyed living with us. He had many luxuries afforded to </div>
<div style="text-align: center;">
him by my husband and me. Mr. Fur drank his water from a glass, </div>
<div style="text-align: center;">
enjoyed his crunchies from Trader Joes, his dishes were crystal and were cleaned </div>
<div style="text-align: center;">
every time he ate. He had monogrammed blankets. Mr. Fur had his own little </div>
<div style="text-align: center;">
bridge across the brook. The English garden bench became his own. Mr Fur </div>
<div style="text-align: center;">
had his own heated bed from Hammacher and Schlemmer in New York. </div>
<div style="text-align: center;">
He had his own Christmas stocking along with his very own fresh catnip in the garden.</div>
<div style="text-align: center;">

<div style="text-align: center;">
Through his writings, Mr. Fur touched many people young, old, shut-ins </div>
<div style="text-align: center;">
and the infirmed. His letters brought smiles to many a face. He in turn </div>
<div style="text-align: center;">
often received letters and cards along with an occasional gift from his admirers.</div>
<div style="text-align: center;">

<div style="text-align: center;">
The Adventures of Mr. Fur, as they were originally called, began some 7 years ago. </div>
<div style="text-align: center;">
His adventures turned into letters that reached so many people and other felines too! </div>

Perhaps in the future, Mr. Fur's Adventures and his letters will be published. </div>
<div style="text-align: center;">
Stay tuned...Meanwhile, we mourn the loss of Mr. Fur and hold his memory dear to our hearts. </div>

I recently came upon this piece of artwork done in pastels up in the attic. I decided to have it framed.<br />
This bunny was done way back when I was a Freshman in high school. I was fortunate enough to take art lessons from a talented neighbor.<br />

I think you will agree, it is charming! Spencer Frameworks did the framing. They are located on Main Street in Spencer, Massachusetts. The two sisters, Patty and Kathy who own the shop are very creative and helpful. It is always a nice experience to visit the shop. When I pick up the finished product, it's even better!<br />

Preheat oven to 350 degrees. Butter and line with wax paper a 9" spring-form pan.</div>

Melt butter into the Guinness in a saucepan over low heat. </div>

Whisk in the cocoa and sugar and take the saucepan off the heat. </div>
<div style="text-align: center;">
Beat sour cream with eggs and vanilla in a separate bowl until combined. </div>
<div style="text-align: center;">
Then add to the beer mixture. </div>

Pour the cake batter into the tin and bake for 1 hour.</div>

Please note...The middle of the cake may still be slightly wet when you take the cake out but it will </div>

firm up as it cools down. </div>

Leave to cool completely in the tin as it is quite a damp cake and could collapse. </div>

1 box confectioners sugar </div>

1/2 cup butter at room temperature </div>

8 oz. cream cheese at room temperature </div>

4 - 6 Tablespoons Bailey's Irish Cream (to taste)</div>

Cream the butter and sugar together until well mixed </div>

Add the cream cheese in cube slowly until incorporated. </div>

Add in Baileys. Continue mixing for 5 minutes until the icing is light and fluffy. </div>

Put dollops of icing onto the top of the cake to recreate the froth on a glass of Guinness. </div>

Helen and her husband Eddy used to live in the house where the film "Mr. Blanding's Dream House" was filmed right here in Worcester, Massachusetts. Having trouble this morning adding photos to my blog. Must be the snow! I was going to post 2 photos that were actually obsolete because since those pictures were taken the other day, we have received 10 more inches. But you could have used your imagination. Couldn't you? </div>

This has been an unbelievable stretch of snowy weather. I know people are fed up with it and so aren't I. But, what I would like to say to Old Man Winter and Mother Nature is to "BRING IT ON!" We are so close to breaking the snow record that I don't want to have gone through all of this shoveling and worry for nothing. I want to be able to say, "I survived the winter of 2015 with the most snow on record and coldest temperatures on record." Now, what do you think of that? We might as well all go for it. After all, in a little over a month it will be spring and I challenge anyone who thinks any different. Meanwhile, take precautionary measures to ensure your family and property are safe and just enjoy the sleigh ride! </div>
