Spinach Lasagna - Easy and helps the meal planning for the week!



This family favorite on page 134 is a real winner!
I've used a piece of Bennington Pottery from my collection!
The black spongeware goes with this time of year.




This lasagna is made with uncooked lasagna noodles.  It can be assembled a day ahead and baked the next day.  This saves time for people with busy schedules.  Follow the last steps by adding the water around the edge of the pan.
Cover tightly with foil.  Bake at 350 degrees 1-1/4 hours.

The Cranberry Harvest

Nancy's at Bill's Bog on Route 124 in Harwich on Cape Cod.  Bill's stand is run on the
honor system.  $5.00 a bag will get you the freshest cranberries yet!
Here's Bill harvesting the cranberries from his bog.  About 10% of total crops are "dry harvested"
and sold as fresh fruit.  The other 85% are "wet harvested" and used to make juices,
sauces and other processed food items. 
The cranberry is one of only three fruits indigenous to North America.  The other
two are Concord grapes and blueberries.   When the pilgrims arrived in the 17th century,
the Native Americans shared with them the many uses of this bitter little red berry rich in Vitamin C.
