Quick...It's time for Apple Crisp!

This was baked in a disposable pan because I was giving this one to my
Uncle Norm who was visiting his daughter who lives in this area.  It makes
a wonderful gift for someone.  Just reheat and serve! Makes the house smell
great and tastes delicious too!

Apple Crisp with Orange Juice

4 cups sliced pared apples
1/4 cup orange juice
1 cup sugar
3/4 cup flour, sifted
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/3 cup butter

Mound apples in a buttered pie plate or in this case an aluminum disposable pan. 
Pour orange juice over them.  In separate bowl, combine sugar, flour, spices and salt; cut in butter until mixture is crumbly.  Sprinkle over apples.  Bake at 375 degrees for 45 minutes or until apples are tender and topping is crisp.  Serve warm with cream or ice-cream if desired.

 

Political Season...Political Cookies

Ann Romney's cookie recipe is delicious!  Big, impressive
cookies filled with M&M candies, chocolate chips, crunchy peanut butter
and oatmeal make for lots of chewing!

Gave these to some neighbors who love our baked goods! Small bags and
decorated tags make for a creative and fun finished product!


1 cup granulated sugar
1 cup packed light brown sugar
1/2 cup ( 1 stick) unsalted butter, softened
1-1/2 cups crunchy peanut butter
1 tablespoon light corn syrup (such as Karo)
3 eggs
1/2 teaspoon vanilla extract
4-1/2 cups old-fashioned rolled oats
2 teaspoons baking soda
6 ounces chocolate chips
2/3 cup M&M's candies

Heat oven to 325 degrees F.  In a large bowl, cream sugars, butter, peanut buter and corn syrup on high speed until well combined.  Beat eggs 1 at a time.  Beat in vanilla extract.

In a separate bowl, mix together oats and baking soda.  Stir into peanut butter mixture until combined.  Mix in chocolate chips and M&M's. 

Using a standard-size ice cream scook, drop dough onto baking sheets (about 9 per sheet).
 Bake at 325 degrees for 18 to 20 minutes or until lightly browned. Cool 2 minutes, then transfer cookies to a wire rack to cool completely.

Yield: about 24 good size cookies
