Jordan Marsh Blueberry Muffins - NO- Good, YES!

I have been searching for the " authentic"  Jordan Marsh Blueberry Muffin Recipe!
Does anyone have it?  If so, please email it to me at
info@twosisterscookbook.com

Here is one from www.cooks.com
It is very good but not the JM Blueberry Muffins, I remember.

1/2 cup butter
2 cups all unsifted flour
1 cup sugar
2 large eggs
1/2 cup milk
2 tsp. baking powder
1/2 tsp. salt
2-1/2 cups fresh blueberries
1-1/2 tsp. vanilla extract
2 tablespoons Turbinado sugar for the tops

Preheat oven to 375 degrees

In a large mixing bowl cream butter and sugar until light and fluffy; add eggs, one at a time
beating after each addition.

In a second bowl, combine all dry ingredients.
Gradually add the dry ingredients to the creamed butter and sugar mixture
along with the milk and vanilla.

Optionally, mash 1/2 cup of the blueberries, and stir in by hand.  This
will turn the batter a light shade of blue and ad a touch of blueberry flavor.
Add the remaining whole berries and stir in gently by hand.

Spray a 12 muffin baking pan with Baker's Joy (my favorite baking product).
Fill greased muffin cups with batter. (I got 9 muffins not 12.)

Sprinkle sugar on top of unbaked muffins.
Bake for 25 minutes or until a toothpick put in the middle comes out clean.

Spain...In Cranston, Rhode Island! A " MUST" Dining Experience!

www.SpainCranston.com
Back in 2003, we celebrated our Mother's birthday
at this fabulous restaurant!  We remember our
experience as being wonderful.  Years have gone
by and we always wanted to return.  Well...
last night we did!
One of the specials of the evening was a chicken
stuffed with lobster.  It rested on a bed of
angel hair pasta and spinach!  YUMMY!

Portuguese  Cod, served brilliantly with a sauce, colorful
vegetables...almost too beautiful to eat!

Veal Spain...absolutely DELICIOUS!
The veal chop was placed on a bed of mashed potatoes.
As you can see the plate was so decorative!

Our waiter is serving me the Vegetarian Paella for "1".
Actually, 3 people could have eaten this delightful dish!
Guess what's for dinner tonight?

Here is the vegetarian paella!  This wasn't on the menu
but they accommodated my special request!

Here is the Arroz Con Pollo.  Basically, chicken with rice,
Cherizo and vegetables.
Once again, a generous portion that can
definitely be shared.

If you are in the area or are in the mood for a nice drive
not far past Providence,  this restaurant comes highly
recommended by our group of  6 .  There were
several birthdays and anniversaries last evening.  All songs were sung
by the waiters in Spanish, of course!

Please, please...Spain must be put on your "bucket list"
of places to eat!  You'll be SO glad you did!
Reservations are a MUST!

Summer Window!

My kitchen window, over my sink, is decorated seasonally.
Since, I spend a lot of time in this area, it is nice to have a pretty view.
Old crystal vases and in some instances old salt and pepper shakers
minus their salt eaten tops are a nice substitute for a vase.
They are the perfect size and they're giving them away at
flea markets and tag sales!  The daily snipping of flowers from
my gardens not only replenishes these vases, keeps the
plants producing more but is so pleasant
to look at while standing at the sink.  An heirloom tomato
and the San Marzano on the left are waiting for an upcoming salad.
Perhaps with some Mozzarella cheese and fresh basil?
What do you think?  I think I know the answer!

Summertime...and the cooking is easy!

Campanelle pasta...chicken breasts cut up into bite size pieces, cooked
in olive oil and garlic.  Meanwhile, cut up 12 cherry or grape tomatoes
put in a bowl with olive oil, salt, pepper and fresh basil.  Cover and let set
until juices meld together.  Cook pasta.  Place pasta in pan with chicken.
Mix with drippings from pan.  Add pasta.  Next add
tomato mixture.  Toss.  Sprinkle with Parmesan and...
ENJOY!

Two Sisters recipe for "Fresh Corn and Tomato Salad" on page 88  with a new Southwestern flare.
Instead of basil use cilantro.  Add a can of rinsed black beans and...
there you have it!  A new twist to one of my favorite summer recipes.

Marinated flank steak with grilled peppers.  You can purchase these
colorful peppers in a bag.  Toss in a little olive oil and some spices .
You can put them on wooden skewers.  Just make sure you soak the
skewers in water first or they'll burn.

A delicious plate of Southwestern fare!  Yummy, colorful, pretty to look at
and so wonderful to taste!  This is a real crowd pleaser
And...don't forget the Sangria!!

Oh, here are the little peppers on skewers!  A fun and simple
idea for any meal anytime of year.
